The other day I was feeling creative and wanted to try something new and unconventional.I started thinking about replacing one essential ingredient of french pastry, a.k.a. butter, and, with a little help of my internet friend, I found the answer I would have never guessed: avocado!
It does make sense as you can extract its oil and make beauty product out of avocado as it is extremely nutritious. It only contains 5 different vitamins, potassium, folate, fiber and oleic acid, a monounsaturated fatty acid (what we usually call the «good fat»)!
Avocado is just one power fruit (yes it is a fruit!)
Who never gave in to the pleasure of eating it as it is, with a spoon and maybe a pinch of sea salt? Now that I had my plant-based butter, I needed an actual cake recipe. As avocado is really rich, I thought: what is the most buttery cake I know? Definitely a chocolate cake! So I opted for a brownie and today I will share with you this very special recipe of the avocado brownie, without butter and easy to make!
Prep: 10 mins Cooking time: 30 mins
For 9 (big) or 12 pieces, you need :
2 medium, ripe avocados
100g dark chocolate
100g brown sugar
50g wheat flour
20g unsweetened cocoa
1/2 packet baking powder
a handfull of walnuts (or any kind of nuts, dry fruit and even coconut shreds)
– Preheat oven to 160°C and set a aside a lightly greased 20x20cm square mold. – Melt the chocolate in a bain-marie and, at the same time, place the avocados flesh in a food processor. Mix well until you obtain a cream. – Transfer the avocado cream into a bowl and add the chocolate. Stir well until you get an homogeneous paste.
– In a separate bowl, whisk the eggs with the sugar. Add the avocado / chocolate paste and mix. Add the flour, cocoa, baking powder and extra topping of your choice. Stir all the ingredients well! – Put the mixture into the greased mold. – Bake in the preheated oven for 30 minutes.
– Wait before it is completely cooled before getting the brownie out of the mold. – Cut the brownie into squares and enjoy!
